Stuffed Pepper with Mushrooms, Greens, and turkey mince

This vibrant recipe for stuffed peppers with mushrooms and turkey mince is a fantastic addition to your mid-week rotation. By combining lean minced meat with earthy wild rice and a generous serving of kale or collard greens, you create a satisfying, high-protein meal that is as colourful as it is nutritious. The peppers become beautifully tender in the oven, acting as the perfect edible vessel for the savoury, textured filling.

Ideal for those seeking a heart-healthy dinner, this dish is packed with fibre from the rice and essential minerals from the raw pumpkin seeds. While the recipe uses green or red peppers, any variety will work well to provide a sweet, roasted base. Serve these as a standalone main course or alongside a light dollop of soured cream for a cooling contrast to the optional hit of hot sauce.
